Red Velvet Project

I call this a project as I had to go to the store 3x for ingredients. I have no idea why but the people in my area seemed to be using a lot of buttermilk! I finally found it and went home to start my Red Velvet Cupcakes. I looked at lots of recipes - I like to use butter not oil and finally found one I liked. my family would be the testers but I made a big mistake - as it was Superbowl Sunday - we always make brownie sundaes. This family only likes chocolate so they took a look at the cupcakes and said, "What's in them" I really didn't want to mention the vinegar, coloring etc so I said, " Oh - lots of things. " They headed towards the brownies. Not wanting to hurt my feelings - my son tried one and said it's ok but not a fav. Translation - It's not chocolate enough!!!

So now I have 17 Red Velvet Cupcakes ahhhhhhhhhhhhhh!
I am a school counselor so I packed them up and they went to school. I sent an email out to staff - "Come and try my new recipe - red velvet cupcakes" Within 30 minutes - gone. They could only take only if they promised to tell me good or bad how they were.

Results: light, fluffy, delicious, make them again.......

Me: I'm not so sure about the coloring, would like to try the beet juice next time and would love to know what part the vinegar plays in all of this.

Definitely fun

Great photos! And I'm sure your work colleagues didn't mind that your family hit the brownies instead - more for them! :)

Yum yum yum delicious! I love baking but can't (err shouldn't) eat 24 cupcakes myself so I often give them away!
